APPELLATION: Sicilia D.O.P. – Bianco Superiore
GRAPE VARIETY: Chardonnay


SOIL TYPE: Contrada Milici: Marl-derived plateau with a high clay content, strongly calcareous and rich in stones.
TRAINING SYSTEM: Trellis system with spurred cordon pruning.
HARVEST PERIOD: Mid-August.
HARVESTING METHOD: Careful selection of the grape clusters directly in the vineyard, followed by manual harvesting into 14 kg crates.

WINEMAKING: The grapes are gently destemmed, followed by approximately 24 hours of cold maceration and gentle pressing using closed-bladder pneumatic presses. Fermentation then takes place at a controlled temperature, partly in oak barriques and partly in stainless-steel tanks.

MATURATION: 12 months, partly in oak barriques and partly in stainless-steel tanks, with regular bâtonnage. Final bottle aging for at least one year.

Selezione di Famiglia is a wine born from a great challenge: to measure ourselves against the world’s leading producers in the use of Chardonnay and create a complex, outstanding white wine with remarkable persistence and an extraordinary capacity for long bottle aging.

Clonal Selection
To create our most prestigious white wine, we have progressively selected specific Chardonnay clones with different oenological profiles. Characterized by very small bunches and exceptionally low yields per vine, further reduced through careful manual green harvesting, these clones all come from the oldest vineyards in Contrada Milici.

The free-run juice begins fermentation in stainless steel and is then transferred to new and second-use oak barriques, where fermentation is completed and the wine ages for one year. This process enhances and accentuates the aromatic precursors of the grapes. Throughout the aging period, the wine remains on its fine lees and undergoes regular bâtonnage.

Tasting Notes
Pale yellow with delicate greenish reflections. The nose is mineral, with flinty notes accompanied by tropical fruit, fig pulp and candied citrus. Delicate and intriguing hints of vanilla and thiol-derived aromas add further complexity. On the palate, it is exceptionally elegant, full-bodied and persistent. Its remarkable balance and freshness give the wine outstanding aging potential.

Food Pairings
Ideal with shellfish, tuna and Fassona beef tartare, confit cod, risotto with Taleggio cream, truffle and long-aged prosciutto crudo. It also pairs beautifully with delicate meats and vegetable-based dishes.
