Our “King” of Metodo Classico
Federico II Millesimato is our “King” of Metodo Classico sparkling wines. It is the result of years of dedicated work and is produced only in the finest vintages, in limited quantities. Each edition represents the realization of a long-held dream: to create an outstanding Sicilian Metodo Classico.
An elegant and complex sparkling wine with an extraordinary capacity for long bottle aging, Federico II is crafted from the most expressive wines of a single vintage, enhanced by a minimum of seven years of lees aging in our cellars.
WINE TYPE: Vintage Brut Classic Method Sparkling Wine
GRAPE VARIETY: Chardonnay
SOIL TYPE: Marl-derived plateau with a high clay content, strongly calcareous and rich in stones.
TRAINING SYSTEM: Tendone and trellis systems, with spurred cordon and Guyot pruning.
HARVEST PERIOD: Early August.
HARVESTING METHOD: Careful selection of the grape clusters directly in the vineyard, followed by manual harvesting into 14 kg crates.
WINEMAKING: Whole-cluster pressing, using only the first pressings. Fermentation at a controlled temperature. The sparkling-wine base wines are aged partly in oak barriques and partly in stainless-steel tanks.
MATURATION: The cuvée, with the addition of the tirage liqueur, undergoes secondary fermentation in bottle. The bottles are then stacked in the cellar and aged on the lees for a minimum of 84 months.
Tasting Notes
Refined and elegant, with a pale straw-yellow color and delicate greenish reflections. The perlage is exceptionally fine and continuous, with a persistent crown. The nose is intensely aromatic, revealing notes of yeast, bread and vanilla, followed by nuances of exotic fruit that beautifully balance the mineral character reminiscent of flint. On the palate, it is full-bodied and structured, with vibrant acidity and a delicate almond-like sensation on the finish.
Food Pairings
A prestigious wine suitable throughout a meal, particularly well matched with fish dishes, mollusks and shellfish, and foie gras.
