TRAINING SYSTEM: Espalier with Guyot pruning
HARVEST PERIOD: Second ten days of September
SOIL COMPOSITION: Clay-limestone soils with the presence of marine sands and sediments
WINEMAKING: Manual harvesting in the early morning hours, followed by gentle pressing of the grape clusters and cold static settling. Slow fermentation at a controlled temperature of 12–14°C in stainless steel, followed by aging on the lees to enhance both structure and elegance.
AGING: In stainless steel for 4–6 months, followed by at least 2 months in bottle to allow the aromatic and taste components to harmonize.
FOOD PAIRINGS: Mediterranean cuisine, seafood pasta, carpaccio, shellfish, savory vegetable pies and cheeses. Also ideal as an aperitif.
CHARACTERISTICS: Bright straw yellow with greenish reflections. Fine and elegant aromas of citrus, white flowers, Mediterranean herbs and subtle salty nuances. Enveloping on the palate, with pleasant sapidity and a harmonious, persistent finish.
