SOIL COMPOSITION: Predominantly clay-limestone soils, rich in minerals
WINEMAKING: Cold pre-maceration, followed by approximately 15 days of maceration at a controlled temperature. Malolactic fermentation is completed.
AGING: In stainless steel.
FOOD PAIRINGS: Grilled meats, stews, porcini mushroom tagliolini, roast pork, red meats and seasoned cheeses. Also suitable for Indian and Thai cuisine.
SERVING TEMPERATURE: 16–18°C
CHARACTERISTICS: Cherry red tending toward garnet. Aromas of small red fruits, licorice and cherries in alcohol, complemented by balsamic notes of anise, eucalyptus and mint. Well structured on the palate.
