Elegance, complexity and longevity. These are the characteristics of our iconic and first born wine, which started the production of still wines in Serrapetrona and the DOC. Its dried grapes percentage always exceeds 60%. A complex wine that needs time during the production but will give it back once in the bottle, allowing it to be enjoyed both newly purchased and after years of refinement.

Yield per hectare: 38 hl
Harvest: manual, mid-October, summer thinning
Vinification: natural drying of part of the grapes (+60%) for 2 months, destemming-crushing, fermentation in steel with indigenous yeasts for 15 days at 24-26 °C
Maturation and aging: 24 months in steel, 36 months in 25 hl oak and part in barrique, 12 months in bottle
Average alcohol content in: 15 % ABV
Characteristics: ruby red with garnet highlights. Elegant and complex with notes of preserved plum and black cherries, withered flowers and a spicy finish of tobacco and cocoa. Soft and velvety, well balanced elegant and persistent
Food pairings: game, braised or stewed meat, roasted guinea-fow, white truffle, polenta and veal shanks
