A Brut Sparkling Wine, Classic Metod, that rest on owns yeast for 48 months. Amore Protetto has a great personality and deepness. Minutolo grapes, also in the sparkling version maintains very interesting notes of aromatics herbs, which make Amore Protetto a sparkling wine with a well structure. An elegant and unconventional sparkling wine, whose type is easily recognizable, but it is also an incredible personal expression.
HARVEST: The grapes are harvested by hand from the “San Domenico” vineyard. The grapes are lightly pressed within 4 hours of the harvest. Harvest period mid-September.
PRODUCTION: The first must is immediately separated from the other must and is moved to the stainless steel tank. The must is kept for 12-14 hours at a very cold temperature.
FERMENTATION: 1st Fermentation: About 15 days at 14 - 16 °C / 2nd Fermentazione: In the bottle.
MALOLACTIC FERMENTATION: No
AGING: Aging in bottle for about 48 months on its own yeasts. Then the wine ages for another 3-6 months after degorgement.
DEGORGEMENT: Handmade
AGEING POTENTIAL: 5 - 7 years
DOSAGE: 7 g/l
Tasting Notes
Intense yellow gold colour. The nose is intense and elegant with light notes of bread and intense hints of aromatic herbs, thyme and sage. Then citrus notes and light hints of almond come up. On the palate it is fresh and sharp, its creamy texture makes the sip full and complex. The nose sensation also throwback on the palate, the hints of almond are more intense on the palate rather than on the nose. The finish is elegant and dry with notes of aromatic herbs returning.
Food Pairing
A sparkling wine with good freshness. The typical aromas of the stop on the yeasts are perfectly balanced and do not cover other hints. For these characteristics Amore Protetto can be paired with many dishes.
TECHNICAL PAIRING: Pumpkin’ ravioli with parmesan fondue.
“HEART PAIRING”: San Michele Oyster (Puglia).
“ROCK N’ ROLL PAIRING”: Toasted bread with Colonnata’s lard, honey and walnuts.
